Hyatt Hotels has just opened The Clayfield property in the heart of Canadian wine country. The hotel is a one-of-a-kind boutique wine-and-wellness hotel inspired by its setting in Niagara-on-the-Lake.
The new property is the ideal base for wine lovers who want to explore vineyards, eat extraordinary food or relax with clay-based and wine-inspired wellness treatments. The Clayfield presents a refined contemporary expression of wine-country living, fusing the artistic spirit of the locale with the charm and character of Old Town Niagara, and the timeless romance of the vines.
Dining and social spaces extend throughout the hotel, including The Rooftop at The Clayfield, Niagara-on-the-Lake's first rooftop patio, serving cocktails and small plates looking out over the vineyards. The Clayfield’s culinary offering is anchored by Terrain, a contemporary wine country restaurant. Rooted in the landscape and seasons of Niagara, by Executive Chef Joel LaBute, the restaurant celebrates the region through produce-driven cuisine, relationships with local growers and producers, and a wine programme that places Niagara’s leading wineries and small-lot producers at its heart. Terrain encompasses an 80-seat main dining room, 25-seat lobby bar, and intimate Chef’s Table creating a destination for locals and visitors to experience the food, wine and character of Niagara.
The spa also takes its cues from Niagara’s mineral-rich clay landscape, as well as its wine culture, with clay-based treatments including body rituals and vinotherapy.
